A Recipe I can't wait to try - Ancho Chicken Tacos with Cilantro Slaw

Cilantro is one of those foods that people either love or hate. 

How true is this statement?!?!  It seems as if most everyone either hates Cilantro or loves it, there is no in between.  For me, I absolutely love it.  I could eat it in most anything and can toss lettuce with cilantro and a little lime juice and consider it the best salad I ever had.  So for those of you who hate it you may not want to continue reading as this recipe boasts Cilantro as a main ingredient.  For those of you like me who love Cilantro grab a napkin as you may need to wipe the drool off your face.  I stumbled across this recipe on a tweet from the cooking light magazine.  It is a healthy recipe that could even be modified for even lower carbs by serving it on lettuce and make the avocado cream into a dressing.   It sounds like a light, fresh meal, perfect for summer.  By the way I'm on my way to New York and I'll be going on a food tour while I'm there - jealous yet?  I can't wait and plan on posting the best dishes and where they're from so be on the lookout fun posts to come.  Have a wonderful week!




Ancho Chicken Tacos with Cilantro Slaw and Avocado Cream
From Cooking Light
Ingredients
Cooking Light Recipe
1 pound skinless, boneless chicken breasts, cut into 1/4-inch strips
3/4 teaspoon ancho chile powder
1/2 teaspoon garlic salt
1/4 teaspoon ground cumin
Cooking spray
1/8 teaspoon grated lime zest
2 tablespoons fresh lime juice, divided
1/4 cup light sour cream
2 tablespoons 1% low-fat milk
1/2 ripe peeled avocado, diced
2 cups packaged angel hair slaw
1/2 cup thinly sliced green onions
1/4 cup chopped fresh cilantro
1 tablespoon canola oil
1/4 teaspoon salt
8 (6-inch) corn tortillas
Sprinkle the chicken with chile powder, garlic salt and cumin.  
Cook in a skillet over high heat for about 4 minutes
Remove chicken from pan and set aside
Combine lime zest, 1 tbsp lime juice, sour cream, milk and avocado in a blender (or food processor) and process until smooth
Toss together remaining 1 tbsp of lime juice, slaw, onions, cilantro, oil, and salt
Divide mixture among tortillas and top each with chicken, about 1 tbsp avocado mix, and 1/4 cup slaw
