Oatmeal Challenge

My sister and I decided to do a 30 day oatmeal challenge. This comes after her recent hiring of a personal trainer that informed her she needed to eat oatmeal everyday for breakfast.  I will admit, I have always heard of the benefits of eating oatmeal but I do not like it.  The texture alone drives me nuts .  My sister also doesn't like it but we both felt it would be beneficial for us to "learn" to like it.  This is where our 30 day oatmeal challenge stems from.  For the next 30 days we will be eating oatmeal for breakfast every morning.  During this time we will be sharing our recipes and mix-ins with each other and I will be posting them here for your enjoyment.  I hope you enjoy the good ones and get a laugh out of the awful ones we come up with!

Day 1: Oatmeal Raisin Cookie Oatmeal
I figured on day one I'd try mixins of one of my favorite desserts.  So I pulled out an oatmeal raisin cookie recipe to get ideas for the spices and such.  It acutally turned out really good!

Day 2: Pumpkin Pie Oatmeal and Apple Blueberry Oatmeal
Meredith and I made up two new recipes and went opposite directions with our oatmeal creations.  Read here to get an idea for a recipe that is refreshing and filling or one that is a warm comfort food.  We loved them both!

Day 3: Dates are Great Oatmeal
I had a bunch of dates on hand so I decided to toss them in.  The result is them melting down into an almost brown sugar taste... and packed with great vitamins and nutrients... YUM!
