Lemon Chicken and Broccoli Rice

"We are living in a world today where lemonade is made from artificial flavors and furniture polish is made from real lemons."

I love the quote above.  It's so true and I have to say lemons are one of my favorite additions to a dish.  They just make everything taste so much fresher that I can't help adding it to everything possible.  Today for lunch I wanted to throw together something fast and healthy and I came up with this and just had to share.  Hope it helps you love lemons as much as me!

Lemon Chicken and Broccoli Rice

Ingredients
1 lemon
1/2 cup roasted lemon broccoli florets (still hot) see this blog post for recipe
1/2 cup cooked leftover cooled chicken, diced see this blog post for recipe idea
1 cup cooked rice (cooled)
1/2 small onion, diced
1 TBSP olive oil
3 TBSP chicken broth

Mix together recipe for lemon roasted broccoli and place in oven
While the broccoli is cooking...
Heat large skillet over medium high heat
Add olive oil and saute onion until soft
While onion in sauteing mix together the zest of the entire lemon and the chicken in a small bowl (see tips about zesting here)
Add rice and chicken/lemon mixture to skillet
Stir to combine
Add chicken stock and half the juice of the lemon to skillet
Cook until warmed through
Add broccoli, the other half of the lemon juiced, and salt and pepper to taste and toss together to combine
Serve and Enjoy!
