Ok, so the last Friday interview I posted was from a New Yorkers perspective and so is this one. Can you tell I'm slightly obsessed with New York? I'm actually going for my third visit in about 6 days and can't wait! For those of you who don't know one of my closest friends moved to New York last year to immerse herself in the Asian culture that exists outside Brooklyn. She is going to be leaving this fall to be a missionary in Asian and thought it would be best to learn the culture and people before she left. Profession: Missionary with Urban Impact
What’s the most challenging thing about your job schedule and cooking/eating/etc… My schedule is much different than a 9 to 5 job. I teach English and or Bible stories at local community centers for adults who have recently arrived in the US. Some days I teach in the mornings, some days I teach at night. Most of the time once I leave the house I do not come back until 9:30 or 10pm. So the majority of my meals are on the go. When I first moved here I would just buy random snacks or meals out. That was not good 1st because it cost too much and 2nd because it was not healthy at all!! So my schedule for life varies as do my meals! When I go to the grocery I usually purchase fruits, veggies that I like raw, humus, yogurt, peanut butter and fruit and veggie smoothie/juices. Rarely do I cook L and usually my meals are more "snacky" style. The weekends are different but I still usually don’t cook, right now it just doesn’t fit into my schedule.

Why you like/love to cook: I love to cook for people. I like knowing they are enjoying the food and having fun together.
Who taught you how to cook: My mom taught me pretty much all of the basic things. She cooks a lot of meat and potato kind of meals so I will definitely be able to please my husband and sons :), but Courtney taught me many of those fun dishes and how to follow recipes! My Grandmother is a wonderful cook so I’ve learned from her how to make apple pie, chicken and dumplings, green beans, and mac-n-cheese. Once I was on my own I learned about spices besides salt and pepper. So there are many people who have taught me about cooking.
